Double Fried Chicken Piccata

Thin layers of chicken breast pounded, breaded in flour, sea salt and cracked pepper, fried and then re-floured and re-fried again, with lemon juice, white wine and capers on top. Serve with a charred endive lettuce salad in garlic and salt on the side, or a pasta noodle of your choice.
