Poor(ish) Man Chupe de Centolla

Let's face it, crab is getting REALLY expensive. I don't exactly have a Chilean King crab laying around (*hint to my sister though in AK for Christmas presents lol) but- I can still buy a jar of lump crab meat, and I've also got a couple of old King's Hawaiian rolls laying around.


So, here we go: lightly brown chopped onion, sweet peppers, add crab meat, pinch of salt, dash of cheap cooking white wine, dash of grated Parmesan cheese and/or cream, chopped up Hawaiian bread soaked in milk (or cream) and thicken on the stove over low heat/turn off. Ladle into any cute appetizer size ramekins, top with parm, a pinch of crab meat and a little celery top on the top and broil until boiling/slightly golden and charred.
